Calamari, squid rings, are only tasty if they are super fresh. Some fresh lemon on top, a little aioli for dipping and nothing more to do. In Madrid they like to put the calamari on their sandwich and drink a beer with it. Making squid rings yourself is not difficult, but be warned: your kitchen will smell quite like them!
Cut the tentacles of the squid is rings of about one centimeter. Beat the egg and put the flour in a deep plate or bowl. Mix a little salt into the flour.
Heat the deep fryer to 170°C. Dip the squid rings one by one in the flour and then in the egg. Then carefully place the ring in the hot oil. Fry the ring until it forms a crispy, golden brown layer. Drain the squid rings on kitchen paper.
Sprinkle some more salt over the calamari. And serve the rings as soon as possible with some aioli and fresh lemon. Buen provecho !
